What is freeze drying and why freeze dry food?

Freeze drying, otherwise known as sublimation, is a process that removes all water content from food. If these foods are properly stored, out of the light and away from heat they can last for up to 25 years!

This process is a great way to preserve food becasue you don't need any chemicals, preservatives or additives to make it work!

From scrambled eggs, and ground beef to ice cream and cheesecake, using a climate controled vacuum chamber, most foods can sucessfully under go this process.

Because there is no water content in these foods it makes them super lightweight so don't be confused when you see the cost per ounce of food is much higher than you might see at a grocery store. Depending on the food waterweight can take up to 90% the total weight of food prior to freeze drying.
